At an early age Charles knew he wanted to be self-employed. This desire would center on his ambition, passion and romance for food. The making of 'The Chef' started at the ripe age of twelve. Normally an age when he and his peers were learning the fundamentals of reading, writing and arithmetic, Charles was busy working in the family’s USDA-inspected meatpacking plant learning the fundamentals of the family business, meat marketing, meat technology and overall food processing from his father, Charles Sr. Schwerd attributes those seven years working for his father as his core inspiration to becoming a chef.
At age nineteen Schwerd enrolled in Scottsdale Culinary Institute – Le Cordon Bleu to combine his informal training from his father with the formal and classic training of a prestigious culinary school. Charles has emerged as a rising star in culinary circles by staying focused and continually exceeding patrons’ expectations at many highly regarded 4 & 5 star resorts and restaurants. Throughout his career Charles has worked to sharpen and expand his culinary repertoire while providing patrons with a world-class dining experience.
Schwerd's resume includes many great restaurants, including; founding Executive Chef & Culinary Partner of John Elway’s steakhouse, Arizona-based Mastro Group where he also co-founded, opened and ran Mastro’s Steakhouse with two locations in Beverly Hills and North Scottsdale, Drinkwater’s City Hall Steakhouse and Mastro’s Ocean Club. Before joining the Mastro Group Schwerd was the western regional Chef for Ruth’s Chris Steak House in Arizona & California. Schwerd has also worked in such fine establishments as The Arizona Biltmore, The Wigwam and The Ritz Carlton.
